Antioxidant carrot, ginger and apple smoothie

Let the day, weekend or week begin with this delicious smoothie for immune support, with carrot, apple and ginger -it’s good for your littles ones as well! So easy to make and one of my favorite ones, which I often suggest as a dietitian-nutritionist specialized in autoimmune diseases and plant-based diet.

Carrot is a rich source of beta carotene, which is converted to vitamin A in the body, which is essential for our immune system. At the same time, ginger relieves the symptoms of colds, while it is good for the stomach, helps digestion, stimulates the body and it is an antioxidant. Apple is a good source of vitamin C but also pectin, a soluble fiber that improves intestinal symptoms, absorbs sugars and fats in the intestine and helps reduce bad LDL cholesterol. Add to all these the magnesium and potassium of the banana and the iron content of molasses and you have the perfect drink in front of you.

Ingredients
3 cups grated carrot
a small piece of peeled ginger
1 organic apple cut in pieces
1 banana cut in pieces
¼ cup of plant-based yogurt
1 cup coconut milk or any other plant-based milk you like
1 tbsp. molasses

Method
You know the drill! Mix them all together in the blender and add any seeds you may have in your kitchen.
