Peach dressing

Since salads are an important, refreshing meal or side dish, we like to make each one different, unique and delicious. After all, when going vegan, salad is more precious than ever and if you stick to lettuce every day, you ‘ll soon get bored and ditch it. Apart from that, it’s by now well established that the more vegetables we eat in a day/week, the more nutrients, antioxidants, vitamins fiber we get, ensuring a well-balanced gut microbiome and a robust immune system -your goal should always be more than 30 different plants per week according to the American Gut Project.

Besides picking a variety of vegetables, we also emphasize on dressings as well and lately we wanted to do something with peach, which has a great summery scent, it provides us with vitamin A and vitamin C, fiber and it goes great with green salads. So we experimented with this one and it worked –with a few alterations!

Ingredients
3 tbsp red wine vinegar
1 tbsp freshly grated thyme
½ tsp molasses or agave syrup
1 ripe organic peach washed and chopped
5 tbsp extra virgin olive oil

Method
Put the vinegar, thyme, molasses and the chopped peach in a bowl and mix well, until all the ingredients become one. Leave the mixture for about 15 minutes mixing occasionally and then add olive oil slowly while mixing, until it’s incorporated in the mixture.
