This chocolate chia pudding combines chia seeds, unsweetened cocoa, fresh figs, banana and goji berries into a creamy, vegan breakfast with a rich flavor and plenty of nutritional benefits. And the best part? You can also enjoy it whenever you’re craving something sweet during the day.
Chia seeds are an excellent source of dietary fiber, which helps promote satiety and supports normal digestive function. They also provide plant-based omega-3 fatty acids (ALA). Cocoa adds polyphenols with antioxidant properties, while figs and banana provide natural sweetness, potassium and additional fiber.
Goji berries and nuts round out the recipe with additional antioxidant compounds and healthy fats. Choosing a protein-rich plant-based drink, such as soy milk, makes this chia pudding a satisfying breakfast that can help support steady energy levels throughout the day. Ingredients – 1 serving
- 3 tbsp chia seeds (about 30 g)
- 200 ml unsweetened soy milk (or another calcium-fortified plant-based drink, or plant-based yogurt)
- 1 tbsp unsweetened cocoa powder
- ½ ripe banana, mashed
- 1–2 fresh figs, cut into pieces
- 1 tbsp goji berries
- 1 tbsp walnuts or almonds
- A little vanilla
- Cinnamon, optional
Method
In a bowl, combine the plant-based drink with the chia seeds, cocoa powder, mashed banana and vanilla. Refrigerate for at least 3–4 hours, or ideally overnight, until the mixture thickens to a creamy pudding-like consistency.
Serve topped with the fresh figs, goji berries and nuts.
Nutrition tip: For a more protein-rich breakfast, add 1 tbsp of plant-based protein powder, such as pea protein, to the mixture. Alternatively, choose soy milk, which generally provides more protein than many other plant-based drinks.
