Here’s a great way to get you and the kids to eat more spinach and upgrade your meal: spinach pancakes! They are very easy, vegan, green (literally) and delicious, and you can also make them gluten-free, with almond flour. Remember that spinach in 100 grams provides us with 15% of the iron we need every day, a good dose of vitamin A and about 40% of vitamin C we need, as well as calcium and magnesium.
Ingredients
2 cups of spinach
1 cup of flour (try whole wheat or almond flour)
1 cup of plant-based milk of your choice
a pinch of salt
1-2 tbsp of extra virgin olive oil
Method
Wash your spinach well, then add it along with the milk, salt and flour to the blender. The mixture should be thick, but you must be able to pour it into the pan. If necessary, add more plant-based milk. In a pan with some olive oil over medium heat, pour some batter and cook it on both sides for a few minutes (about 1 minute on the side), until your pancake is ready. Remember that the first pancake is always frustrating. Then each pancake gets better!
After cooking them all, try different types of toppings such as hummus, salad, caramelized onions, mushrooms and serve!
