For most people, peas are typically enjoyed boiled with other vegetables or in a traditional Greek tomato-based stew or maybe mashed. This time, however, we’ll try them roasted—a completely different, high-protein version that will even win over those who don’t typically favor peas.
Spicy roasted peas are a simple, nutritious, and flavorful dish that combines the benefits of vegetables, spices, and extra virgin olive oil. Not only are they easy to prepare, but they also follow the principles of food synergy, where ingredients “work together” to enhance nutrient absorption. For example, curcumin, the active compound in turmeric, has low bioavailability on its own. However, piperine, the active compound in black pepper, increases curcumin absorption by up to 2000%! 500g frozen peas
1 tsp cumin
1 tsp sweet paprika
1/2 tsp turmeric
1/4 tsp cayenne pepper or black pepper
1 garlic clove, minced or finely chopped
2 tbsp olive oil
For serving
1 fresh tomato, diced
1 hot chili pepper, finely chopped (optional)
1 tbsp extra virgin olive oil
Method
Preheat the oven to 180°C (350°F). Remove the frozen peas from the freezer and rinse them under water to remove any ice crystals. Spread them on a baking tray lined with parchment paper.
In a bowl, mix the cumin, paprika, turmeric, pepper, and garlic. Add the olive oil and stir to combine. Pour the mixture over the peas and toss well to coat evenly.
Roast the peas in the oven for 20 minutes, stirring halfway through to ensure even cooking.
Once roasted, let them cool slightly. Serve with fresh diced tomato, finely chopped chili pepper (if using), and a drizzle of extra virgin olive oil.
