Spicy cauliflower with tahini sauce

How many times have you skipped cauliflower whether because of its peculiar smell, not knowing how to prepare it, or perhaps due to childhood… “trauma”? However, there are many ways to enjoy it, with the most common being cauliflower steaks, which we’ve seen before. This time, I have something very different to suggest, inspired by a dish I tried at a restaurant that absolutely delighted me.

First, let’s talk about cauliflower itself—one of the most nutritious vegetables, rich in vitamins C and K, as well as fiber that supports digestive health and the immune system. Its antioxidant properties promote cellular health and protect the body from free radicals. The addition of spices like turmeric, cumin, and paprika not only enhances the flavor but also provides additional health benefits, thanks to their anti-inflammatory and antibacterial properties. Last -but not least-, the tahini sauce offers an excellent source of plant-based protein, calcium and healthy fats, which support bone and cardiovascular health.

Ingredients
1 medium cauliflower (cut into small florets)
2 tablespoons olive oil
1 teaspoon turmeric
1 teaspoon cumin
½ teaspoon smoked paprika
½ teaspoon garlic powder
Salt and pepper to taste
2 tablespoons tahini
1 tablespoon lemon juice
1–2 tablespoons water (if needed, to thin the sauce)
Fresh parsley or cilantro for garnish (optional)

Instructions
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper. In a large bowl, mix the olive oil, turmeric, cumin, smoked paprika, garlic powder, salt, and pepper. Add the cauliflower florets and toss well to coat them evenly—be careful not to break them apart!

Spread the cauliflower on the baking tray and roast for 20–25 minutes, or until golden brown and tender.

Meanwhile, in a small bowl, whisk together the tahini and lemon juice, adding 1–2 tablespoons of water to reach the desired sauce consistency. For extra flavor, season with a bit of salt and pepper.

Once the cauliflower is roasted and golden, remove it from the oven and drizzle the tahini sauce over the top. Garnish with fresh parsley or cilantro, if desired, and serve.

This dish is incredibly flavorful and aromatic, with the tahini adding a creamy texture that perfectly balances the roasted cauliflower! You can enjoy it as a main course or as a side dish with rice or salads.
