Scone with lemon zest and apricots

Scones are easy and fast to make little breads, often slightly sweetened, you can enjoy with your everyday coffee or tea. In this recipe, we are going to make vegan, gluten free scones, full of gut microbiome-friendly fibre, with the sweet taste of dried apricots and raisins. Among other nutrients, apricots are filled with vitamin C and flavonoids, which makes them a wonderful antioxidant, vessel protective choice, which prevents LDL cholesterol from oxidation. Furthermore, raisins and oat bran give a great feeling of fullness, so it’s a great snack to keep you away from nibbling. I suggest you try them with peanut butter (especially if you’re the athletic type), maple syrup or homemade jam. You and your kids will love them!

Ingredients for 6 people
¾ cup rice flour
¾ cup buckwheat flour
¾ cup raw almond powder
¾ cup oat bran
1 cup raisins
1 cup coconut milk
1 cup dried apricots
Juice and zest of 1 1emon and 1 orange
2 ½ tsp gluten free baking powder
1 tsp vanilla extract
½ tsp salt

Method
Cut your apricots in small pieces and mix them with all your dry ingredients (rice flour, buckwheat flour, almond powder, oat bran) in a bowl.

In another bowl, mix your raisins along with the milk, vanilla extract, lemon and orange juice and zest and then add your dry ingredients. Blend with a spoon and then, as the mixture gets thicker, use your hands.

Put your dough in a wooden surface and knead it. Then place it in a non-stick pan and make a ball with it, trying to make a circle out of it by pressing it. Once you reach the shape of a circle, divide it in 6 pieces and bake in 180°C (356°F) for 20 minutes.

Tip
You can add cacao nibs if you’re a friend of chocolate, which are highly nutritious, naturally low in sugar and a good source of fiber, protein and healthy fat.
