Breakfast porridge with coconut milk, chia seeds and fig

It’s an ideal breakfast, totally plant-based, filling and super delicious, but you can also try it as an afternoon snack for extra energy, vitamins B, protein and fibre. If you’re dealing with constipation, it can also help you in the most natural way, as figs are known to be a very powerful weapon for gut microbiome and a healthy gut, supplying it with prebiotics and improving digestive wellness. Plus, its nutritional content is also very supportive when it comes to the immune system, as gut health and bodily resistance to diseases go together hand in hand.

Ingredients (for 2)
150ml coconut milk
100ml water
60gr oats

1 tbsp maple or agave syrup
1 tsp fresh vanilla
1 tsp ground cinnamon
1 tbsp soaked chia seeds (also use the water-gel)
4 figs

In a small pan, heat your milk and mix it with fresh vanilla. Soak your oats in hot water and in about 3 minutes, when the mixture will start to look like pudding, add the warm milk with the vanilla. In the end add the maple syrup, the soaked chia seeds with their gel, and the cinnamon and serve along with the cut figs as topping.
