Sweet Walnut Pie with no baking

In Greek we call it “karidopita” and it’s definitely a favorite dessert in the healthiest version you’ll ever find, vegan, gluten free and super appropriate for Christmas. Since it’s made with walnuts, it’s full of healthy fat, antioxidants and fiber, gut-microbiome-friendly and quite easy to make. You don’t need oven since it’s a no-baking dessert we discovered while we were travelling through French countryside. 

For the base you’ll need
1.3 cup walnuts
½ cup oats
2 tbsp molasses or maple syrup or agave syrup
A pinch of salt
2 tbsp coconut oil, plus some more to use for your pan

For the filling you’ll need
4 dried plums, soaked for 15 minutes in hot beverage with anise (trust me, I know what I’m doing!)
¼ cup raw, unprocessed brown sugar
1/3 cup molasses or agave syrup or maple syrup
½ cup grounded walnuts (keep some whole, you’ll need them)
½ tsp cinnamon
½ tsp nutmeg
zest from 1 orange
½ cup of almond milk fortified with calcium

Method
For the base: Start by mixing the dry ingredients (walnuts, oats, salt) in the blender. They don’t need to become a powder, just mix well. Oil your pan with coconut oil and then spread your blended mixture, making sure it makes a solid base. Leave your pan aside.

For the filling: Blend your walnuts, sugar, molasses, cinnamon, nutmeg and milk in your blender. Your mixture must be soft and fluffy. Then chop your plums and add them in your mixture along with the coconut oil. Mix them so that the new ingredients incorporate in the mixture and spread it on your base in the pan. Add your zest and put it in the fridge for a few hours. That’s it!

Make sure you get the right dosage of coconut oil and if you want, sprinkle some chopped nuts on top. And if it doesn’t seem impressive, don’t get disappointed! It’s taste will surely leave you “wow”-ed!
