There are times when we get bored of eating the same thing over and over again -especially kids- such as the same lettuce salad. I think we’ve all been there, if we want to be honest. But if we allow ourselves to be creative, even with the same ingredients, we can have a totally different result in our plate. That’s how we made these bite-sized wraps, something like… salad dolma. The different visual stimulus makes us savor and enjoy salad in a different way, while it has a more enticing texture.
Of course, it requires more effort than a regular salad, but at the same time, it’s delicious, it’s seasonally appropriate, it’s not restrictive (you can make it with whatever vegetables you have on hand in your kitchen) and it’s another imaginative way to consume vegetables (which means more fiber, vitamins, minerals, antioxidants) or even treat your friends.
You could even call them Greek, raw spring rolls or the summer snack, which will be totally fresh and delicious as the temperature goes up.
Ingredients (for 4 wraps)
4 large lettuce leaves
2-3 red cabbage leaves
2-3 leaves of white cabbage
2-3 carrots
1 very ripe avocado
10 cherry tomatoes
juice of 1 lemon
salt, pepper
Method
Wash all your vegetables well (prefer organic if possible). Cut the white and red cabbage leaves on a cutting board into smaller pieces, as finely or coarsely chopped as you like. Peel your carrot and cut it into julienne or long pieces. Cut your cherry tomatoes in half as well.
Peel your avocado and mash it with a fork in a large bowl. Pour in all the vegetables and the juice of 1 lemon, add salt and pepper and mix everything together.
Stuff the lettuce leaves with your mixture and wrap them up.
Tip
This recipe is also ideal if you want to somehow make use of vegetables that have been in your kitchen for several days and want to use them up instead of letting them go to waste. Try it with whatever vegetables you have in your fridge!
