Scrambled tofu

Do you miss eggs at brunch on a vegan diet? Let’s make scrambled tofu that will make you forget about them once and for all! A meal rich in protein and antioxidants that has the taste and texture of scrambled eggs, without the cholesterol. Try them at your breakfast or brunch on weekends or whenever you want and see how delicious and nutritious it is.

1 block of tofu
1 tablespoon extra virgin olive oil
1 tablespoon of nutritional yeast
1 tsp turmeric
1 tsp garlic powder
black pepper

Crush tofu in a bowl with your hands, a fork, or whatever suits you.

Pour 1 tablespoon of olive oil over medium heat in a pan and add the tofu. Cook, stirring constantly for a few minutes, until the tofu water evaporates.

Add 1 tablespoon of nutritional yeast, 1 teaspoon of turmeric, some garlic powder, pepper and salt and stir for a few more minutes. This is the basic version, to which you can add some plant-based milk at the end for a richer texture.

However, we also like it with a variety of vegetables. Before adding tofu, you can sauté some onion and garlic for extra flavour or even some tomato. Towards the end, if you like, you can add some spinach, peppers, broccoli or other vegetables of your choice!
