We all know how much kids love strawberries and how happy we are when they eat them, as they are rich in vitamin C, fiber and antioxidant anthocyanins. My kids love them with a little molasses on top (and if I convince them, we sprinkle seeds too). But we also make jams in order to enjoy them later.
I would suggest you, in your next attempt to make jam, not to use any sugar and try this special and very easy jam instead. It’s rich in vitamin C from strawberries and iron from molasses, in a combination for the absolute absorption of iron.
Ingredients
500gr. strawberries
1 tbsp. molasses or agave syrup
some rose water
Method
Put 500 grams of strawberries in a pot of water and bring to a boil. Once soft, melt them with a masher. Let them simmer for a few more minutes and add 1 tbsp. molasses or agave syrup. See how sweet you want it to be and adjust.
Stir and if you want, add a little rose water at the end (something I tried for the first time in a recipe for strawberries and I loved it).
Let the jam cool for a few minutes and put in a sterile jar.
