Need some energy for the new season? How about if you can get it from a single but utterly nutritious bite with these vegan energy balls you can make from scratch! I always make sure I have the ingredients I need for these handy in my kitchen, so I can make them anytime my kids –or us- need something sweet, tasty and healthy.
They’re full of protein, omega-3 and calcium from chia seeds, fiber for healthy gut microbiome, iron from molasses and dried dates, vitamin C from lemon and they’re so easy to make, you’ll love them even more.
You’ll need
10-12 dried dates (soak them overnight for better blending)
4 tbsp molasses
4 tbsp chia seeds
4 tbsp coconut oil
2 tbsp lemon zest
2 tbsp lime zest
a pinch of salt
Method
Put them all in your blender and mix until all the ingredients blend together. The mixture might be a bit hard, so you’ll have to stop blending from time to time and fix it with your hands. When it’s done, take small pieces and make little balls with your hands. Put them in some parchment paper in the refrigerator. Your energy snack is ready!
