Easy, homemade flatbreads

Flatbreads are nothing more than an easy-to-make bread-pie, in which you can use your imagination and add toppings that you like. You can make them with pizza dough, which you can spread and give it any shape you like, keeping it thin.

For toppings, you can use whatever you like from vegetables, plant-based cheese, herbs, olives. I suggest trying it with guacamole, which is rich in good, healthy fat, chopped garlic which is prebiotic, cherry tomatoes which you can cut in half and spread them around, salt, pepper and pine nuts. Or better yet, with whatever veggies you have available in your kitchen, for an easy and nutritious snack!

Ingredients
2 cups of flour -if you want to make it gluten-free, you can use instead of 1 cup of all-purpose flour, ½ cup coconut flour and ¾ oat flour and add some potato starch if you wish for better texture
1 tbsp olive oil
1 tsp salt
1 tsp garlic powder
¾ cup warm water
1 tsp active dry yeast
1 tsp sugar

Method
Put the yeast and the sugar in a bowl, pour warm water and whisk. Let it sit for 5 minutes covering it with a towel.

Use a stand mixer with a dough hook on low speed or your hands and mix the flour, the salt, the garlic powder and the olive oil with the yeast mixture until they’re combined and you get a thick dough. Transfer it on a surface in the kitchen and knead for about 2-3 minutes. Add flour if it’s too sticky. Let your dough rest and rise for about 1 hour at room temperature.

When ready, divide it in 2 or more if you want to make little flatbreads and one at a time, put your dough between 2 parchment papers and flatten with a rolling pin until they are very thin. Use a fork or your fingers to make dimples and then brush with olive oil.

Now it’s time to experiment with your toppings. We bake them as they are and combined them with guacamole or tahini afterwards, but you can add whatever you want on your dough, like cherry tomatoes, pine nuts, garlic and bake at preheated oven at high temperature for about 15-20 minutes.

The baking smell all over the house is absolutely ticklish!
