Baked sweet potato patties

Potato patties (or “potatokeftedes” in Greek) are a beloved meze that work just as well as an appetizer or side dish at the table as they do as a snack on the beach—or anywhere, really. In this vegan and healthier twist, we use sweet potato, known for its high content of beta-carotene, antioxidants and fiber. Sweet potatoes have been linked to Blue Zones and longevity, making them an upgraded alternative to regular potatoes. They support immune health, help regulate blood sugar, provide a beautiful natural sweetness and color, and also act as a prebiotic for a healthy gut. By baking them instead of frying, we cut down on fat without sacrificing flavor. The result is fiber-rich patties packed with vitamins A, C, and E, free of animal products, containing healthy fats, and richer in antioxidants than the classic version. Let’s make them!

Ingredients (makes about 10 patties)
2 large sweet potatoes (about 500 g / 1 lb)
1 medium potato (optional, for extra density)
1 small onion, grated or finely chopped
2–3 spring onions, finely chopped
1 small carrot, grated
2 Tbsp chopped dill or parsley
1 tsp cumin (optional, for a more Eastern flavor)
½ tsp sweet or smoked paprika
1 Tbsp ground flaxseed
Salt and pepper
4–5 Tbsp oat flour or whole-wheat flour (or chickpea flour for extra protein)
2 Tbsp olive oil (plus a little extra for the baking sheet)

Method
Boil or roast the sweet potatoes and potato until tender (about 20–30 minutes). Let them cool slightly, then mash them in a large bowl with a fork or potato masher.

Add the remaining ingredients -onion, spring onions, carrot, flaxseed, herbs, flour, olive oil, spices- and mix well until you have a uniform, moldable dough. Shape into patties and place on a baking tray lined with parchment paper.

Bake at 200°C / 400°F (preheated oven) for about 20–25 minutes, flipping once, until golden and crispy on the outside.

When ready, serve with coconut yogurt or a lemon-tahini dip and a fresh salad for a light, refreshing combo.

Tips

  • For extra crispiness, lightly spray the patties with olive oil before baking
  • You can also cook them in an air fryer at 190°C / 375°F for 12–15 minutes
  • Pair beautifully with green salad, tomato salad or avocado sauce
