Cherry sauce with no sugar

Finally, cherry season is here -one of spring’s most functional foods, with benefits that go beyond taste and extend to both the body and its internal rhythms.

Cherries are among the first spring fruits to stand out not only for their flavor, but also for the way they interact with the body’s systems. Beyond being sweet and enjoyable, they have a deeper biological role linked to inflammation, sleep, and recovery.

Their effects are largely attributed to anthocyanins, powerful antioxidants that help reduce oxidative stress and support the body’s anti-inflammatory balance. At the same time, they appear to positively influence the circadian rhythm, helping regulate the sleep–wake cycle, while also supporting recovery after physical stress or exercise. They are also associated with cardiovascular benefits, as they support vascular function and microcirculation.

In simple terms, they are not just another sweet fruit -they are a fruit that seems to work in harmony with the body’s natural regulatory systems.

And if you want to use them in a different way beyond eating them fresh, a sugar-free cherry sauce can transform them into something ideal for porridge, yogurt, pancakes, or even cheesecake — or other more creative combinations.

Ingredients
• 1½–2 cups cherries (pitted)
• 2–3 tbsp water
• 1 tsp lemon juice
• 1 small cinnamon stick or a pinch of ground cinnamon
• (optional) 1 tsp chia seeds for a thicker texture

Instructions
Place the cherries in a small saucepan with the water and cinnamon, and heat over medium to low heat. As they begin to soften, gently press them with a spoon so they break down and release their natural juices. Continue simmering for about 8–10 minutes, until the mixture thickens slightly and develops a more concentrated texture and aroma.

Remove from the heat and stir in the lemon juice to balance the sweetness and brighten the flavor. If you prefer a thicker, more sauce-like consistency, add the chia seeds at the end, mix well, and let the mixture sit for about 10 minutes to set naturally.

Allow it to cool slightly before using, so the texture stabilizes and the cherry aroma fully develops.
