If you are vegan or fasting, pasta is likely to be often in your diet (hopefully whole grain or pasta from legumes). Today we will try a very different recipe that has plenty of color and taste, while it is full of antioxidants and vitamins, thanks to beetroot! Remember that beets are good for the liver preventing the accumulation of fat in it, while they are full of antioxidants and their juice is beneficial at lowering blood pressure.
Ingredients
300 gr. boiled beets
2 tbsp. extra virgin olive oil
2-3 cloves garlic
a bit of chili pepper
salt
Method
Mash the boiled beets with olive oil, the garlic cloves, salt and the chili pepper until all ingredients are combined (taste it and adjust). Prepare your pasta (spaghetti or whatever else you like) and combine with your beet mixture (makes sure it goes everywhere!).
Do not forget to sprinkle thyme and pumpkin seeds at the end before serving!
