Homemade bean mayo

I know that there are many vegan mayo out there, “untying” the hands of those looking for this taste and texture in a sandwich, a salad, a burger etc. But I was wondering, why not make it ourselves, homemade and healthy? Tasting it while making it and adjusting it according to our liking? 

Ingredients
400 grams of boiled beans
1 tbsp. Dijon mustard
1 tbsp. lemon juice (or more if you want more acidity)
1 tbsp. miso
some garlic powder and onion powder.

Method
As you may have already realized, the “hardest” and most time consuming part of the recipe is to boil the beans, which you will have soaked from the previous day. Once this is done and you let your beans come to room temperature, the rest is done in 2 minutes. So, when your beans are ok, put all the ingredients in a blender and beat until the result is creamy. If necessary, you can add a little water. That’s it, folks! Enjoy!
