Now that summer is here, why not get inspired by French cuisine and make a nice ratatouille (watch the movie with the kids, to get in the mood!). It’s an easy plant-based recipe that may take less effort than you think, load you on fiber, antioxidants, vitamins, minerals and help you get a variety of plant foods in just one meal.
Ingredients
2 eggplants
3 zucchini
3 tomatoes
2 small yellow pumpkins
For the sauce
1 large onion
3-4 cloves of garlic
1 yellow pepper
1 carrot
2 jars of chopped tomatoes
salt
pepper
2 tbsp. olive oil
some parsley or basil
some fresh thyme
chili flakes
turmeric
Method
Start by slicing the eggplants, zucchini, tomatoes and squash. In a large deep frying pan, make your sauce by adding the chopped onion, chopped garlic, chopped pepper and carrot to the olive oil.
Sauté for a few minutes and add the tomatoes, salt and pepper, turmeric, chili flakes, thyme. Stir, add some water and bring to a boil until the vegetables are soft. Then use a hand blender to make your sauce more… saucy and if it is too thick add water. Taste for salt to see if it needs adjustment. The main part is done!
Now spread your sauce on the base of a baking dish, place one by one the vegetable slices upright or as you like, spread a little sauce on top and bake in a preheated oven for about 40-50 minutes at 180°C (356°F). Once it is ready, sprinkle with a little parsley or basil and enjoy.
