Ok, who’s up for some homemade ice cream with banana and chocolate flavor, with no added sugar, but full of protein, fiber, iron, calcium and polyphenols instead? Yes, there is such an ice cream, if you make it yourself. All you need to do is save your last brown bananas (you can always make good use of them –never throw them away) and make sure you have all the following every-day ingredients in your pantry.
Ingredients for 2 servings
3 ripe bananas
2 to 2.5 tbsp cocoa powder
1 tablespoon of molasses
1 tsp vanilla extract
2-3 tbsp plant-based milk
2-3 cashews
Method
Cut your ripe bananas into slices and lay them out on parchment paper. Put them in the freezer until frozen, for at least 3 hours or overnight.
Once frozen, blend them in a blender with the cocoa, molasses, vanilla and plant-based milk for a few minutes until the mixture resembles a frozen mousse. Taste and adjust the sweetness with extra molasses or agave syrup and divide the ice cream into bowls.
Add chopped cashews as topping or in the mixture and if you don’t enjoy it right away, put it in the freezer or if you want it to be a mousse-like texture, keep it in the fridge.
